Today my gluten-free lavender shortbread with homemade orange curd recipe features in The Guardian and is my modern twist on the classic Jammie Dodger.

Dale Berning Sawa of The Guardian described it as “ an elegant take on the Jammie Dodger. Punching out the holes seemed to me a step too far. In fact, I didn’t even bother with the sandwiching: I was perfectly happy just to dunk the biscuits in the curd.”
