Mini Fishcake Lollipops (GF)
Getting Evie, Ben and Will to eat fish is somewhat of a challenge in our house (though oddly enough on holiday they will eat BBQ’d sardines like they are going out of fashion). I have found that putting things on sticks is more appealing to them and has a much better chance of being eaten. My first (of two) childrens lunchbox recipes created for Genius is based on my take of the calzone pizza. This recipe is great if you need to whip up some gluten-free sweet party treats last minute, are light as a feather and melt in the mouth. Last night my family of 5 attended a gluten-free event hosted at the M&S store at Cheshire Oaks. These gluten-free events are currently running across over 70 stores around the country and is something we have never experienced with other mainstream retailers. Big thumbs up M&S.
