Earlier this year Genius contacted me to work on an exciting project with the company which I was proud to be a part of. With curiosity about what would be revealed, I travelled to London which you can read about here and met the key team involved.

Genius have been extremely busy, (more than ever) in perfecting their core products and have significantly improved the taste, texture and smell of their ever increasing range of breads on offer. Confidently described as “their best ever yet”, it would be crass not to acknowledge this. Even my 7 year old coeliac commented on the difference without me mentioning the change and welcomed the new improvement with an “mmm”, followed shortly with “can I have another slice?!

My objective for this project was to utilise Genius’ core products in a myriad of ways but from a families perspective and also to develop several recipes suitable for school lunch boxes and parties using these products. Bring on the challenge, all of a sudden I seemed to gather many little people desperate to be my taste testers and so the following happened.

Lunch boxes can be boring and predictable so I created Pizza Pillows and Draughts game inspired sandwiches using Genius Gluten-Free Soft White Farmhouse bread and Genius Gluten-Free Triple Seeded Farmhouse bread.

I then developed 2 recipes suitable for a gathering or celebration. I made Mini Fishcake Lollipops with the children and created a video for the recipe here  and Fruity Syllabub Toasts. One thing was clear, age was irrelevant and everyone enjoyed each recipe.

So, as the party season approaches, why not try something new and make these recipes, thats New Genius Thinking.
