Fresh Fruit With Ginger Dipping Cream (GF)

Ginger Dipping Cream Serves: 12 Fruit Skewers
These fresh fruit skewers served with ginger dipping cream will be well received at a Summer party. Use a colourful selection of your favourite seasonal fruit threaded on to wooden skewers and enjoy dipping into this cream accompaniment. It is not as sweet as chocolate or caramel sauce but equally tasty.
Ingredients:
A selection of seasonal fruit
50g / 2oz soft brown sugar
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon honey
1 tablespoons plain yogurt
2 tablespoons mascarpone
25g / 1oz stem ginger, finely chopped
12 wooden skewers
Method:
1. Place the soft brown sugar, butter, vanilla extract, ground cinnamon and honey into a small pan. Stir over a low heat until melted, then allow to cool for a few minutes.
2. Once cool, add the yogurt, mascarpone and stem ginger and stir until evenly blended.
3. Lastly, thread a selection of colourful seasonal fruits onto wooden skewers and display either on a plate or stood up in a sturdy colourful cup or small vase.
Top Tip: Place the cream into several ramekin dishes so that all the party guests can reach.

Gosh! This couldn’t look more mouthwatering! I love the idea of a ginger cream to go with the fruit. It makes a nice change from many of the overly sweet versions out there. I have just been making fruit kebabs with my little ones but I will 100% be trying this with the dipping cream! And….those raspberries look beautiful!

I’ve been loving making fruit dips lately, this ginger dipping cream sounds so refreshing! I’m going to try to make a vegan version 🙂
