Smoked Salmon and Spinach Rolls (GF)
Makes: 18 Rolls
These little smoked salmon rolls make a great little snack to take on a picnic or prepare in advance for a summer party.
110g / 4oz cream cheese, softened
¼ lemon, juice and zest
110g / 4oz smoked salmon
2 handfuls baby spinach leaves, stalks removed
1. Combine the cream cheese, lemon juice and zest until thoroughly blended.
2. On a large plate cut the smoked salmon into approximately 5cm² and spread a thin layer of the cream cheese filling edge to edge.
3. Next scatter the baby spinach leaves over the top of each parcel and roll up tightly to make cylinder shapes. Chill in the fridge for 1 hour or until needed.
