Earl Grey Tea Biscuits (GF)
Makes: 10 Biscuits (8cm in diameter)
These biscuits have a hint of earl grey and lemon, delicate in flavour and melt in the mouth. There is very little waste with this recipe as it doubles up to make iced gems with the remaining cut out shapes.
225g / 8oz gluten-free plain flour
2 Earl Grey tea bags, leaves finely ground
110g / 4oz butter, softened
50g / 2oz soft brown sugar
1 lemon, zested
Pre-heat the oven to 190°C / Fan 170°C / 375F / Gas 5
Grease a baking tray.
1. Place the flour and earl grey tea leaves in a small bowl and stir until evenly blended.
2. In a separate bowl, whisk the softened butter, sugar and lemon zest until light and fluffy. Gradually add the flour mixture until combined to form the dough.
3. Place in the fridge for 30 minutes until firm, then roll out on a gluten-free work surface. Lay the biscuits on the baking tray and place in the oven for 10 minutes.
4. Sprinkle with icing sugar or decorate with coloured butter icing for the iced gems.
