Lemon and Cherry Madeleines (GF)
Madeleines make the perfect accompaniment to enjoy with a mid-morning cup of tea. They are light as a feather and best enjoyed on the same day as baking.
2 medium eggs
½ teaspoon gluten-free vanilla extract
½ lemon, zest and juice
85g / 3oz caster sugar
85g / 3oz gluten-free plain flour
½ teaspoon gluten-free baking powder
85g / 3oz butter, melted and cooled slightly
4 cherries, sliced into thirds
Icing sugar, to decorate
Preheat the oven to 200°C / Fan 180°C / 400°F / Gas 6
1. Brush the madeleine tray with a little melted butter, then leave on one side.
2. In a medium sized bowl place the eggs, vanilla extract, lemon zest and juice and sugar. Whisk until evenly combined. Gradually add the flour, baking powder and melted butter. Continue to whisk for 5 minutes.
3. Carefully pour the mixture into the madeleine tray and place a slice of cherry in the middle of each cake mould.
4. Bake in the oven for approximately 8-10 minutes depending on your oven, then remove from the oven and leave to cool on a wire rack. Lightly dust with icing sugar and enjoy immediately.
