Smoked Salmon and Vine Tomato Omelette (GF)

Makes: 1 Omelette

Smoked salmon and eggs make the perfect breakfast combination and this recipe will be ready in minutes.


2 medium eggs
1 tablespoon milk
50g / 2oz smoked salmon, roughly chopped
10g / 1/2 oz unsalted butter
25g / 1oz cheddar cheese, grated
2 small vine tomatoes, quartered
Black pepper to season

Fry over a medium heat


1. In a bowl, place the eggs, milk and black pepper, then gently whisk with a fork. Next add the chopped smoked salmon.

2. Meanwhile warm a frying pan over a medium heat and add the butter to coat the bottom of the pan evenly.

3. Next pour in the egg mixture and gently wind the pan round and round to ensure the egg mixture is evenly distributed.

4. Once it has begun to set, sprinkle over the grated cheese and tomatoes, occasionally lifting the edges to check it isn’t sticking, then fold in half and in half again.
