I was recently commissioned by Food Thoughts Cocoa, to develop a recipe using their 100% cocoa powder product for Sainsbury's online. It is naturally unsweetened and gluten-free which I particularly like and significantly, they originally pioneered Fairtrade Cocoa with Oxfam in 1989.
