Leeds Gluten-Free Food Fair 2015: My Highlights.

Local gluten-free food fairs like today are like gold dust. Having visited Leeds Gluten Free Food Fair for the past three years now…sometimes knee high in snow, nothing deters people from attending this event organised by Leeds Coeliac Group. As queues developed outside, I was under no illusion that today wasn’t going to be another jam packed day. The buzz and excitement was evident from the outset too as people chatted, young and old, catching up with old friends, making new ... Continue Reading

Chicken, Tarragon and Wild Mushroom Pies (GF)

Makes: 3 Individual Pies (4" diameter) As it is National Pie Week I thought I would share our family favourite gluten-free pie recipe which is slightly healthier as it uses less pastry than a traditional pie so the emphasis is all about the filling. Decorate with tiny puff pastry hearts and serve with homemade chunky potato wedges and seasonal greens. Ingredients:
 150g / 5oz gluten-free puff pastry 1 dessert spoon olive oil 25g / 1oz butter 4 boneless chicken thighs, roughly ... Continue Reading

Lemon and Lavender Cakes (GF)

I have been looking forwards to making these elegant gluten-free individual cakes for a long time and envisaged the end result from the outset. The colour and style of the cakes was inspired by Tiffany and Co. meets Wedgwood and would make a lovely little cake to make for your Mum on Mother’s day. Serves: 3 deep cakes (3” diameter) Cake Ingredients: 250g / 9oz gluten-free plain flour ½ teaspoon gluten-free baking powder ½ teaspoon bicarbonate of soda 110g / 4oz golden caster ... Valentine’s Day Guest Post With Udi’s UK

I was invited to create a guest blog post for Valentine's Day, with a mix of gluten-free recipes that appeal to a wide audience, (not just couples). As a parent of three young children, preparing a romantic meal for me and the hubby is a distant memory, at least for now so I wanted to make a meal that offered flexibility. Read the full post here and try the recipes. Continue Reading

Valentine Crispy Cakes (GF)

Today William brought home not one but two gluten-free dark chocolate crispy cakes that he had made at school baking club. Carefully measured, stirred and scooped into the cup cake cases, William had a whale of a time getting messy with his friends! He won my heart with his creations, but the hardest decision for him was which one to eat and which one Mummy could eat! WILL’S QUOTE OF THE DAY “Mummy, I'll have one cake but the other is for you, for Valentine's Day! I love chocolate, ... Continue Reading

Fruity Pancakes (GF)

Makes: 16 Mini Pancakes

Pancake Day is a highly anticipated day for all ages and so I decided to make this recipe for my little boy who was diagnosed with coeliac disease at the age of 18 months. It was really important to me that he did not miss out or feel different in any way and so these light but substantial mini pancakes can be created in minutes before the school rush begins.

Toppings are key to creating delicious tasting pancakes whether gluten-free or otherwise so ... Continue Reading

2 Oxford Place, Leeds Review.

Last year I participated in a gluten-free baking competition created by Delicious Alchemy and was delighted to be chosen as their Gluten-Free Magic Bake Off Champion. Part of the prize included afternoon tea at the exclusively gluten-free restaurant, 2 Oxford Place in Leeds. My companion for the day was my five year old son who is coeliac and so it was amazing for him to be able to eat anything that he wanted to without compromise. Read all about our indulgent experience here.   Continue Reading
