Double Delight Berry Bite Cupcakes (GF)
Makes: 20, 4cm, (1½”) diameter
These gluten-free mini morsels are great if you lean towards indecision like me! The top sponge is flavoured with puréed raspberries, the bottom one flavoured with blackberries and sandwiched together with a delicate vanilla buttercream. Twice the flavours! The children enjoyed these on a recent picnic but they would also make great party food or squeezed into a lunch box for all ages.

Delicious finger food crammed full of a wide variety of seasonal vegetables. Either eat them on their own or pair them with gluten-free soy sauce or sweet chilli dipping sauce. Center Parcs and Tots 100 Challenge!
So I noticed this evening that Center Parcs are having an Ice Lolly challenge and coincidentally we had just made our favourites today whilst on holiday, helping to keep the children hydrated. Great for my 4 year old coeliac and sibling tots - Here is my recipe that combines several different fruity flavours. As some cordials contain gluten I decided to go the whole hog and use freshly pureed fruits combined with yogurt. Yum!
