This recipe is great if you need to whip up some gluten-free sweet party treats last minute, are light as a feather and melt in the mouth. I recently had the pleasure of sampling some edible viola flowers from Delamere Flower Farm which is set on the edge of Delamere forest in Cheshire. Today my gluten-free lavender shortbread with homemade orange curd recipe features in The Guardian and is my modern twist on the classic Jammie Dodger. Dale Berning Sawa of The Guardian described it as “ an elegant take on the Jammie Dodger. Punching out the holes seemed to me a step too far.
