As summer approaches, these moist box cakes would make the perfect picnic accompaniment or lunch box sweet treat. The sponge is light and the fig slices add extra fruity flavour and texture. Nectarines or peaches would also work well.

No lunch box or picnic would be complete without some kind of sweet treat. With a light and fluffy sponge and filled with juicy raspberries and a peach slice on top - everyone will be wanting a second!

Double Delight Berry Bite Cupcakes (GF)
Makes: 20, 4cm, (1½”) diameter
These gluten-free mini morsels are great if you lean towards indecision like me! The top sponge is flavoured with puréed raspberries, the bottom one flavoured with blackberries and sandwiched together with a delicate vanilla buttercream. Twice the flavours! The children enjoyed these on a recent picnic but they would also make great party food or squeezed into a lunch box for all ages.

Chocolate, Orange and Ginger Box Cakes (GF)

Chocolate cake is yummy, lets face it! My recipe is light but rich in colour and taste. The orange and ginger compliments the chocolate perfectly. An “any excuse cake!”
