Genius Gluten-Free Round Up.
Earlier this year Genius contacted me to work on an exciting project with the company which I was proud to be a part of. With curiosity about what would be revealed, I travelled to London which you can read about here and met the key team involved. Genius have been extremely busy, (more than ever) in perfecting their core products and have significantly improved the taste, texture and smell of their ever increasing range of breads on offer. Confidently described as “their best ever ... Continue Reading
Mini Fishcake Lollipops (GF)
Getting Evie, Ben and Will to eat fish is somewhat of a challenge in our house (though oddly enough on holiday they will eat BBQ’d sardines like they are going out of fashion). I have found that putting things on sticks is more appealing to them and has a much better chance of being eaten. Having made these on several occasions, nobody realised that they were also gluten-free which gets a big thumbs up. I used Genius Gluten-Free Triple Seeded Farmhouse bread to make the bread crumbs. T... Continue Reading
7 New Reasons to love Schär: Review
My little boy has been a massive fan of Schär products for as long as he has been diagnosed with coeliac disease at the tender age of 18 months. Now, at the cheeky old age of 8, he is very aware of his likes and dislikes for certain foods and is brutally honest and as black and white as only an 8 year old knows how. I love that childhood innocence and clarity without the need to impress or say what you want to hear. So, these are his and my thoughts on the latest 7 new exciting ... Continue Reading
Draughts Game Inspired Sandwiches (GF)
Sandwiches needn’t be boring! These fun and nutritious draughts game inspired sandwiches make the perfect addition to a school pack up, party or picnic. I always try and get my coeliac son Will and his 2 siblings involved in the kitchen so they gain an understanding about suitable ingredients and preparation which will stand them in good stead for the future. With this recipe I let the children decide on their favourite fillings to create their own sandwiches. They really enjoyed this ... Continue Reading
Pizza Pillows (GF)
My first (of two) childrens lunchbox recipes created for Genius is based on my take of the calzone pizza. Using Genius Gluten-Free Soft White Farmhouse bread instead of pizza dough, these little pockets are packed with everything you would expect from a calzone pizza and are the perfect size for little hands. Another way to discreetly include some veggies if they are a challenge in your household with the kiddiewinks! Makes: 6 pillows Ingredients: 3 slices Genius Gluten-Free Soft ... Continue Reading
Fruity Syllabub Toasts (GF)
This recipe is great if you need to whip up some gluten-free sweet party treats last minute, are light as a feather and melt in the mouth. I used Genius Gluten-Free Soft White Farmhouse Bread as this new improved loaf definitely has better taste, texture and aroma and is their most dependable bread to date. My entire family could see a huge improvement, especially my biggest little critic William who has coeliac disease. I had to be quick taking the pictures as my 4 year old was also eager ... M&S Gluten-free Event.
Last night my family of 5 attended a gluten-free event hosted at the M&S store at Cheshire Oaks. These gluten-free events are currently running across over 70 stores around the country and is something we have never experienced with other mainstream retailers. Big thumbs up M&S. You can find your nearest M&S event here. It was brilliant to take my 7 year old coeliac to an event without having to swerve all the yummy food and be able to sit back and enjoy all the tasters together ... Continue Reading
The Key Lightbulb Moments That Changed Our Life As A Gluten-Free Family.
Recently Genius Gluten-Free contacted me to become a brand ambassador which I was delighted to do, given that many of their products are a firm favourite with my young coeliac son. Over the next few months there will be several Genius related posts. From recipes that are ideal for school lunch boxes to ones that are perfect for parties and family gatherings. During a conversation with Genius Gluten-Free, they asked what we have learned so far in order to make ... Continue Reading
New Genius Thinking!
I was recently invited to attend a brand immersion event in London with Genius Gluten-Free entrepreneur, Lucinda Bruce-Gardyne, to discuss Genius’ recent product developments. Genius Gluten-Free came about as Lucinda was driven to create tasty gluten and wheat free bread for her gluten intolerant son because she was disappointed by the gluten-free breads on offer. From a very young age I have always been passionate about baking, cooking and everything sandwiched inbetween. I really ... Continue Reading
Delamere Flower Farm Edible Flowers.
I recently had the pleasure of sampling some edible viola flowers from Delamere Flower Farm which is set on the edge of Delamere forest in Cheshire. My vision was to incorporate them into a versatile Summery recipe suitable for all kinds of special occasions from weddings to family gatherings and this was the end result pictured below. The recipe can be found here. The scent of the violas were powerfully fragrant yet delicate in flavour and contain vitamins C, A and several antioxidants. ... Continue Reading
