Genius Gluten-Free Round Up.

Earlier this year Genius contacted me to work on an exciting project with the company which I was proud to be a part of. With curiosity about what would be revealed, I travelled to London which you can read about here and met the key team involved. Genius have been extremely busy, (more than ever) in perfecting their core products and have significantly improved the taste, texture and smell of their ever increasing range of breads on offer. Confidently described as “their best ever ... Continue Reading

Mini Fishcake Lollipops (GF)

Getting Evie, Ben and Will to eat fish is somewhat of a challenge in our house (though oddly enough on holiday they will eat BBQ’d sardines like they are going out of fashion). I have found that putting things on sticks is more appealing to them and has a much better chance of being eaten. Having made these on several occasions, nobody realised that they were also gluten-free which gets a big thumbs up. I used Genius Gluten-Free Triple Seeded Farmhouse bread to make the bread crumbs. T... Continue Reading

Pizza Pillows (GF)

My first (of two) childrens lunchbox recipes created for Genius is based on my take of the calzone pizza. Using Genius Gluten-Free Soft White Farmhouse bread instead of pizza dough, these little pockets are packed with everything you would expect from a calzone pizza and are the perfect size for little hands. Another way to discreetly include some veggies if they are a challenge in your household with the kiddiewinks! Makes: 6 pillows Ingredients: 3 slices Genius Gluten-Free Soft ... Continue Reading

M&S Gluten-free Event.

Last night my family of 5 attended a gluten-free event hosted at the M&S store at Cheshire Oaks. These gluten-free events are currently running across over 70 stores around the country and is something we have never experienced with other mainstream retailers. Big thumbs up M&S. You can find your nearest M&S event here. It was brilliant to take my 7 year old coeliac to an event without having to swerve all the yummy food and be able to sit back and enjoy all the tasters together ... Continue Reading

The Key Lightbulb Moments That Changed Our Life As A Gluten-Free Family.

Recently Genius Gluten-Free contacted me to become a brand ambassador which I was delighted to do, given that many of their products are a firm favourite with my young coeliac son.

Over the next few months there will be several Genius related posts. From recipes that are ideal for school lunch boxes to ones that are perfect for parties and family gatherings.

During a conversation with Genius Gluten-Free, they asked what we have learned so far in order to make ... Continue Reading

New Genius Thinking!

I was recently invited to attend a brand immersion event in London with Genius Gluten-Free entrepreneur, Lucinda Bruce-Gardyne, to discuss Genius’ recent product developments. Genius Gluten-Free came about as Lucinda was driven to create tasty gluten and wheat free bread for her gluten intolerant son because she was disappointed by the gluten-free breads on offer. From a very young age I have always been passionate about baking, cooking and everything sandwiched inbetween. I really ... Continue Reading

Delicious Alchemy’s Wonderfully Nutty Granola

As American author, John Gunther once said, “All happiness depends on a leisurely breakfast”, so I was excited to receive Delicious Alchemy’s latest edition to their colourful collection, the ‘Wonderfully Gluten Free Nutty Granola’ to see how it faired. Now part of a dozen gluten-free products currently on the market, Delicious Alchemy have unveiled another superb product, this time adding to their increasing breakfast range. As a graphic designer, I have always been a big fan ... Continue Reading
