Fruity Syllabub Toasts (GF)

This recipe is great if you need to whip up some gluten-free sweet party treats last minute, are light as a feather and melt in the mouth. I used Genius Gluten-Free Soft White Farmhouse Bread as this new improved loaf definitely has better taste, texture and aroma and is their most dependable bread to date. Delamere Flower Farm Edible Flowers.

I recently had the pleasure of sampling some edible viola flowers from Delamere Flower Farm which is set on the edge of Delamere forest in Cheshire. My vision was to incorporate them into a versatile Summery recipe suitable for all kinds of special occasions from weddings to family gatherings and this was the end result pictured below. Double Delight Berry Bite Cupcakes (GF)

Makes: 20, 4cm, (1½”) diameter These gluten-free mini morsels are great if you lean towards indecision like me! The top sponge is flavoured with puréed raspberries, the bottom one flavoured with blackberries and sandwiched together with a delicate vanilla buttercream. Twice the flavours! The children enjoyed these on a recent picnic but they would also make great party food or squeezed into a lunch box for all ages.
